Simple, Healthy Curried Garbanzo Beans

One of my favorite recipes is curried garbanzo beans; not only did it help me lose 10 pounds in one month, It’s easy to make, tasty, and has a ton of weight-loss benefits. No matter what I did in the past, my stubborn weight never came off easily, I always felt tired and my feet would hurt a lot. I thought I couldn’t lose weight because of my genetics – until I started eating differently. Today I’m sharing one of the recipes that helped me finally lose weight.

Curried Garbanzo Beans by Masala Body

These curried garbanzo beans helped replace cravings for fattening, unhealthy food because it’s so delicious! The dish is a healthy comfort food, warmed with deep, complex flavors! The garbanzo beans provide a ton of fiber, so they keep you full, and the spices add an extra layer of health and weight-loss benefits. The ginger aides digestion, and the other spices help burn fat and act as appetite suppressants.

This dish is delicious on its own, but it also goes well with almost any meal as a side, or with rice or quinoa!

Curried Garbanzo Beans

Ingredients

  • 1 Tbsp olive oil
  • 1 medium yellow onion, chopped lengthwise
  • 2 cloves of garlic, chopped (~1 1/2 tsp)
  • 1 1/2 tsp ginger, chopped
  • 1/2 large jalapeno, chopped
  • 1/2 small tomato, chopped
  • 1/4 small can tomato paste (if do not have paste can use 1/4 small can of tomato sauce or use another 1/2 tomato)
  • 3/4 tsp salt
  • 3/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp. garam masala or (1/2 tsp. cinnamon)
  • 1 15.5 oz. can of garbanzo beans, rinsed and drained
  • 2 cups water
  • 1/2 cup chopped cilantro, for garnish

Directions

  • Heat oil in medium sized pot on medium heat.
  • Add onion, garlic, ginger and chilies and mix until onion becomes light brown, about 10 – 15 minutes.
  • Add tomato and tomato paste and mix.
  • Add spices and roast uncovered for 2-3 minutes.
  • Add beans and mix together for 5 minutes.
  • Add 2 cups of water, or enough to more than cover the beans. Cover and cook on medium low heat for 30 minutes.
  • Garnish with cilantro
