Snack Healthy with a Potato and Sunflower Seed Pâté

I enjoy pate but sometimes I want something light and savory and this is why I created my sunflower pate. Whether you are having a get together and want to offer a vegetarian option or you just want something tasty for lunch with a side salad, this pate is sure to please both you and your guests. Made with tasty, sunflower seeds it is good for you too!

Potato and Sunflower Seed Pâté

Ingredients

  • 1 cup hulled raw sunflower seeds
  • 1/2 cup spelt flour (for gluten free, use almond flour)
  • 1 large onion, diced
  • 1/4 cup olive oil or sunflower oil
  • 2 Tbsp lemon juice
  • 1 medium yukon gold potato, diced
  • 1/2- 1 cup hot water
  • 2 tsp sea salt
  • 1/2 tsp thyme
  • 2 tsp basil
  • 1/2 tsp black pepper
  • 1/2 tsp sage

Directions

  • In a food processor, grind sunflower seeds until they are fine.
  • Combine ground seeds, flour, oil, lemon juice, onion, potato, and herbs in a bowl and mix. Drizzle in the hot water slowly and mix until you have a gooey texture. (You may not need all the water depending on the moisture in your potato and onion and you don't want it to get too watery.) Spoon the mixture into a loaf pan.
  • Bake 350°F for 1 hour. Let cool and serve with crackers or alongside a salad!
