We’ve all done it. We’ve spent hours slaving away in a hot kitchen, cleaning, seasoning and stuffing a turkey that seems to have tripled in size since we brought it home from the grocery store. Crossing our fingers that it has fully defrosted and it will be ready to cook when we wake up at 6:00 a.m. to turn the oven on.

We’ve joked about the 10 hours it takes to make Thanksgiving dinner and the 10 minutes it takes everyone to eat it. But what if we could change all that? What if we could give Thanksgiving dinner a cosmopolitan, ultra-chic makeover that would allow people to nibble on all the comforting flavors of Thanksgiving without being chained to the table? What if we could give us chefs time to sit down and enjoy a cocktail with our guests?

Turkey, Cranberry and Goat Cheese Crostini

Ingredients

  • 1 turkey breast
  • 1/2 cup of goat cheese
  • 1 bag of fresh cranberries
  • 1 3/4 cup of granulated sugar
  • 1 orange juiced and zested
  • 1 lemon juiced and zested
  • 12-18 crostini toasts

Directions

  • Set your oven to 350 and bake the turkey breast for 1 hour until completely cooked. (Baking time will depend on weight and size of the turkey breast. Please reference the packaging to determine accurate time.)
  • Add the cranberries, sugar, orange and lemon juices and zests to a large saucepan and stir over medium heat.
  • When the cranberries have broken down to form a sauce remove the pan from the heat and set aside to cool.
  • Plate your crostini toasts (this recipe will make 12 -18).
  • Spread a tsp of goat cheese on each toast.
  • Slice your turkey breast into bite size portions that will fit on top of the goat cheese and toast.
  • Top your turkey breast slice with a tsp of the cooled cranberry sauce.

Sea Salt Green Bean Fries

Ingredients

  • 1 package of fresh green beans
  • 1 tsp of sea salt
  • 2 tbsp olive oil

Directions

  • Preheat your oven to 400.
  • Lay the green beans out on a cookie sheet.
  • Drizzle the beans with olive oil then sprinkle with sea salt.
  • Cook at 400 for 10-15 minutes until the beans begin to crisp on the outside.
  • Remove and set on a towel lined plate to strain of any excess oil.
  • Plate and serve.

Twice Baked Red Potato Skins with Sage Gravy

Ingredients

  • 6 small red potatoes
  • 1 jar of turkey gravy
  • 1 tbsp of sage leaves
  • 1 tsp olive oil
  • 1/2 cup of shredded white cheddar cheese

Directions

  • Preheat your oven to 350.
  • Drizzle each sage leaf in olive oil and bake at 350 for 10-15 minutes until the leaves crisp up.
  • When the leaves are crisp remove them from the oven and set them aside but leave the oven on.
  • Boil the potatoes on the stovetop until they soften (approximately 20-30 minutes).
  • Remove the potatoes from the boiling water and cut them in half.
  • Gently scrape the center of each potato half into a large bowl. Make sure you leave enough of the potato on the skin to form a sturdy bowl.
  • Once all of the insides from each half have been added to one large bowl mix in one jar of turkey gravy, the white cheddar and the crisp sage leaves. You can reserve one sage leaf per serving as a garnish if you wish.
  • Once mixed scoop a spoonful of filling into each potato skin.
  • Bake at 350 for 20 minutes until the top crisps.
  • Garnish with the reserved roasted sage leaves, and plate.

Stuffing Stuffed Mushrooms

Ingredients

  • 12 large white cap mushrooms
  • 1 box of stuffing mix
  • 1 cup of water
  • 1/4 cup of butter
  • 1/4 cup of orange juice
  • 1 tbsp olive oil

Directions

  • Preheat the oven to 350.
  • Prepare the stuffing as directed on the box but add the orange juice in for extra moisture and flavor.
  • Clean the mushroom caps. Be sure to remove the stems and carve out the centers to form a deeper bowl to work with.
  • Add a spoonfull of cooked stuffing to each mushroom cap.
  • Add the stuffed mushrooms to a baking dish.
  • Drizzle the mushrooms with olive oil and bake for 20-30 minutes until the mushrooms soften and brown.
  • Plate and serve.
