Sweet Lemon Basil Shortbread Cookies

Love basil and lemon? Love shortbread? I love shortbread cookies and thought I would give them a fresh makeover with some fresh basil and fresh lemon juice. The lemon and basil add a summery feel to these crunchy, buttery and sweet cookies. They are a bit out of the ordinary so they are perfect for a barbeque or a dinner party.

Kids love the glaze and will eat these cookies up. Don’t like glaze? Just sprinkle some raw sugar on top of cookies before putting the cookies in the oven to bake. Baking with your kids? The recipe is simple enough that they can get involved by measuring and helping you add the ingredients. My kids love smelling and exploring the ingredients.

When slicing these cookies, make sure to cut them on the thicker side because cut too thin, they could burn easily.

Sweet Lemon Basil Shortbread Cookies

Yield: ~18 cookies

Ingredients

    For the cookies:
  • 1 cup of unsalted butter, softened
  • 1/2 cup of granulated sugar
  • 2 cups of all purpose flour
  • 1 Tbsp of vanilla extract
  • lemon juice of one lemon
  • 4-5 basil leaves, chopped
  • raw sugar (optional, if you are not using the glaze)
  • For the Lemon Glaze
  • 1 cup of confectioners sugar
  • 1 Tbsp of milk
  • 1 Tbsp of fresh lemon juice
  • lemon zest

Directions

  • Combine butter and salt. Cream until light and smooth. Then, slowly incorporate flour until combined. Add vanilla extract and lemon juice, and fold in basil leaves. Wrap dough in plastic wrap and shape into a log. Refrigerate for at least 3-4 hours.
  • When ready to bake, preheat oven to 350 degrees. Slice cookies to desired thickness. (I cut mine about .25 to .5 inches thick). If you don’t like glaze, sprinkle some raw sugar on top of the cookies. If you love glaze, leave the cookies as is.
  • Bake for about 15-20 minutes or until done. Take out of oven and cool on the cooling rack.When cooled, combine ingredients for lemon glaze. If you glaze is too thick, add milk. If it is too thick, add sugar. Spread glaze on cookies.
  • Eat, Yum!
