Roasted Donut Peaches with Oatmeal Cookie Crumb Topping

This time of year, fresh, sweet sweet peaches are as far as the eye can see. But, have you ever seen or tasted a donut peach? With it’s mild flavor, it begs to be roasted. The donut peach is also not quite as sweet as your average peach, so I decided to sweeten them up and add a bit of texture all at the same time.

I realize the heat outside is still strong, however, I feel fall in the air. This is the perfect gateway dish into the upcoming season.

Roasted Donut Peaches with Oatmeal Cookie Crumb Topping

Ingredients

  • 8 donut peaches
  • 8 Tbsp butter
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup oats
  • drizzle of honey, optional
  • drizzle of balsamic vinegar, optional

Directions

  • Prepare your peaches by rinsing and removing pit in the center of the peach; place in baking pan. Drizzle peaches lightly with balsamic vinegar and honey if using and set the pan aside.
  • In a bowl combined flour, sugar, and butter. Using a fork crumble ingredients together; quickly stir in oats.
  • Top peaches with oatmeal cookie crumbles and bake at 350 deg. for 10-15 minutes. Cook time varies, so watch closely and remove when crumble starts to brown and the peaches are golden.
  • Enjoy with a scoop of ice cream or whipped topping for something extra special!
