Honestly, I’m not big on grilling. I get it, it’s the quintessential summertime activity for Americans but being a vegetarian kind of lessens the need for charcoal and lighter fluid.
Even though I’m not a carnivore and therefore rarely “grill out”, I can still appreciate the effect it has on a good veggie burger or certain fruits and vegetables.Really, whoever came up with the idea to grill a peach deserves a big virtual high-five. Cooking them on the grill (or grill pan) transforms them into slightly tender, juicy little bundles of joy.
Pair that with a warm baguette topped with a blend of creamy goat cheese and mascarpone, drizzled with honey on top, and you have yourself a little bite-sized piece of heaven.
