Guilt-Free Apple Crumble


  • 5 Tbsp maple syrup
  • 1 Tbsp cornstarch
  • 2 tsp lemon juice
  • pinch of salt
  • 4 cups apple chunks (Granny Smith or Golden)
  • 1/2 cup blueberries
  • Crumble:
  • 1 cup almond flour
  • 1 cup puffed quinoa
  • pinch of salt
  • 1 tsp ground cinnamon
  • 4 Tbsp maple syrup
  • 4 Tbsp extra virgin olive oil
  • 1 Tbsp oat flakes


  • Preheat oven to 350ºF.
  • Lightly oil a 9-inch pie pan.
  • In a large mixing bowl, mix the maple syrup, cornstarch, lemon juice and salt until well blended. Add in the apples and blueberries and mix well. Pour the mixture into the prepared pan.
  • To make the topping, combine the almond flour, puffed quinoa, salt, cinnamon, oil and maple syrup in a medium bowl and stir to mix.
  • Spoon the topping over the fruit and bake for 25 to 30 minutes, until the topping is firm and the fruit is bubbling.
  • Cool for 5 minutes approximately and enjoy it best while it's still warm.
