We have all heard the adage, “I Scream, You Scream, we all scream for ice cream.” But what if you are lactose intolerant and cannot partake at your local ice cream shop or from the ice cream trolleys touring your neighborhood. Why not make your own frozen dairy- free treats, so when the craving comes, it is simply a reach into your deep freeze. I love to play around with flavors and this one was a winner at our dessert table last week.

Banana Maple Pecan Ice Cream by Shirley Plant

Banana Maple Pecan Ice Cream

Ingredients

  • 1 jar pecan butter (227g)
  • 2 ripe bananas
  • 1/3 cup maple syrup
  • 2/3 cup coconut milk
  • 1/4 tsp cardamom

Directions

  • Mix all ingredients in a food processor until smooth. Put into a sealed glass container until frozen. Scoop into dessert bowls and enjoy.
