Edamame Kale Salad with Sesame Vinaigrette

This is a great salad to try if you are trying to incorporate more kale into your diet. It’s simple and full of flavor. The flavor actually gets better as the salad is refrigerated and marinates in the vinaigrette. It’s the perfect make-ahead salad.  You normally can’t do that with lettuce because lettuce will wilt if left too long in dressing. Kale doesn’t wilt like lettuce does.

If you have teenagers or kids, like I do, and are trying to get them to eat healthier, test this salad. Most teenagers and kids love edamame. They can start by eating the robust vinaigrette flavored edamame and gradually start eating the kale. They will be so proud of themselves and so will you. Try serving this salad as a side dish. Seriously, when I made this salad for lunch, it wasn’t like I announced that I had just made cupcakes and everyone came running to the kitchen to grab theirs. It took some time to get them to try my Edamame Kale Salad. But once they did, I received praise for my successful salad as they did for eating it!

For ease and quickness, trying using packaged kale, shredded carrots, and frozen edamame. Pre-packaged vegetables work great for weeknight meals or when you don’t have much time for chopping.

Edamame Kale Salad with Sesame Vinaigrette


    For the salad
  • 8 to 10 cups baby or black kale leaves, stems removed, torn into bite size pieces
  • 1 cup edamame, unshelled (frozen edamame perfectly works)
  • 1 cup shredded carrots
  • 3 green onions, sliced thinly
  • 2 tablespoons sesame seeds, toasted*
  • *Note: If you are unable to purchase toasted or roasted sesame seeds, you can easily toast them. Place sesame seeds in a small frying pan and toast over medium low heat just until golden, stirring often to brown evenly.
  • For the vinaigrette
  • 1 large garlic clove, minced
  • 1 Tablespoon light olive oil
  • 2 teaspoon sesame oil
  • ¼ cup rice vinegar
  • 2 teaspoon sugar
  • 2 teaspoon Dijon mustard


  • Place all the salad ingredients in a large bowl. Put aside.
  • In a small bowl, whisk together the vinaigrette ingredients.
  • Toss vinaigrette into salad and enjoy!
