Sweet and Simple Gluten Free Snickerdoodles

We love gluten free desserts that taste like we think they should: not crumbly, not hard, not grainy, just perfect, delicious, moist, and sweet. So when we found a recipe for gluten free snickerdoodles, we were ecstatic!

Bisquick makes a gluten free mix we love for pancakes and waffles, and it is the base for lots of recipes on the Betty Crocker website. Now, we know why – because it is diverse and doesn’t taste all that different from a regular mix, which makes these snickerdoodles all the more worth making. Here’s our modified recipe from the original (which can be found here):

Gluten Free Snickerdoodles

Gluten Free Snickerdoodles


  • 2 eggs, room temperature
  • 1 cup sugar, plus 2 tablespoons
  • 1/2 cup butter, softened
  • 2 cups Bisquick® Gluten Free mix
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract


  • Mix your sugar, eggs, vanilla, and butter. Then, add your Bisquick® Gluten Free mix and stir until it forms a ball. Refrigerate for about twenty minutes, to firm up.
  • Once firmed up, roll into tablespoon-sized balls, and roll each cookie in 1 teaspoon of ground cinnamon and 2 tablespoons sugar.
  • Bake for 10 minutes at 375. Serve warm with milk to smile freely. Makes about two dozen cookies.
